Description

Fernando Santibañez makes Xicaru in small batches at a palenque in Matatlán, Oaxaca. Espadín agave is harvested at approximately eight years, then cooked in underground conical stone ovens fueled by mesquite and ocote. Fermentation takes place in open-air pine vats, followed by double distillation in small copper alembics. The name comes from the Zapotec word for “beautiful.”

Smoke leads the nose, joined by earth, mesquite and mature-agave sweetness. Cooked agave carries onto the palate with a slightly sweet character. Smoke remains present, while subtle herbs add another detail. The taste is clean and crisp, with a smooth, lingering finish.

Serve neat in a copita with orange slices and sal de gusano. For cocktails, try a Mezcal Margarita or a mezcal mule with ginger beer and lime.

Smooth, lingering warmth

Nose: The aromatic journey begins with a distinctive smokiness that wafts through the air, a signature note derived from the traditional method of cooking 100% Maguey Espadin in an underground conical stone oven. The nose is further enriched by earthy tones, hints of mesquite, and the natural sweetness of mature agave.

Taste: Xicaru Silver Artesanal Mezcal unfolds on the palate with a delicate interplay of flavors. The smokiness persists, accompanied by the rich, slightly sweet character of cooked agave. There's a subtle herbal quality, a testament to the meticulous fermentation process in open-air pine vats. The taste is clean and crisp, offering a true representation of the mezcal's raw ingredients.

Finish: The finish is a journey into the heart of Oaxaca, with the mezcal undergoing double-distillation in small copper alembics. The result is a smooth and lingering warmth that resonates with the mezcal's artisanal craftsmanship. Each sip is a homage to the jaguar, symbolizing strength and agility in ancient Zapotec culture.

How to drink

Xicaru Silver Artesanal Mezcal is best enjoyed in a manner that allows its authenticity to shine through. Serve it neat in a copita glass to fully appreciate the intricate layers of smokiness and agave sweetness. For a traditional touch, accompany the mezcal with slices of orange sprinkled with sal de gusano (worm salt) to enhance the flavor experience.

Consider incorporating Xicaru into classic mezcal cocktails like the Mezcal Margarita or enjoy it in a simple mezcal mule with ginger beer and lime. The versatility of Xicaru makes it suitable for sipping contemplatively or as the star ingredient in creative mezcal-based concoctions.

Every bottle of Xicaru Silver Artesanal Mezcal is a journey into the heart of Oaxaca, an embodiment of tradition and craftsmanship that invites you to savor the beauty and complexity of this exceptional spirit.
