About ensamble mezcal

An ensamble is a mezcal made from two or more agave species cooked, fermented and distilled together, rather than blended after the fact. Espadín often provides the structure; tobalá, cuishe or tepeztate add florals, minerality or a savoury finish.

It is the mezcalero’s recipe, and it changes with what the hillside gives each season. Batch numbers matter here.

Questions

What collectors ask

Is an ensamble the same as a blend?

Not quite. A blend mixes finished mezcals; an ensamble cooks and distils the agaves together, so the flavours are integrated from the start.

Which agaves are typical?

Espadín with one or two wild agaves is the common pattern, but some ensambles use four or five species.

How do I choose one?

Start with an espadín-tobalá ensamble for balance, then explore. The label lists the agaves and usually their proportions.
