Description
Fernando Santibañez's family recipe guides Xicaru at a traditional palenque in Matatlán, Oaxaca. Espadín agave is harvested at about eight years. Mesquite and ocote fuel an underground conical stone oven for cooking. A horse-drawn tahona crushes the cooked agave before natural fermentation in open-air pine vats. Double distillation takes place in small copper alembics. Oak barrel aging follows for this reposado.
Earthy agave and light smoke meet vanilla, toasted oak and caramel on the nose. Roasted agave leads the palate, with dried fruit, warm spice and restrained herbal and floral notes. Sweetness and smoke run together. The long finish carries warmth, oak and agave sweetness.
Serve neat in a copita or whiskey glass. For an Old Fashioned, use Xicaru Reposado in place of bourbon to bring its agave and smoke into the drink.
