Description

In San Francisco Nuxaño, Oaxaca, fifth-generation mezcalero Juan Antonio Coronel makes Tres Tribus from wild Tobalá. His work draws on Zapotec and Mixtec traditions. The agave cooks underground over Encino oak for up to a week before being broken down with wooden mallets. Fermentation takes place in subterranean cement amphoras with volcanic spring water and native yeast. Two passes through copper stills follow. The mezcal is bottled unaged.

Cooked pineapple, fig, and quince meet jasmine on the nose, with toasted cacao and wild herbs underneath. The palate is silky, bringing together stewed fruit, honeysuckle, agave nectar, and roasted cacao. Volcanic stone and a saline edge accompany a long, clean finish.

Pour neat into a clay copita or jicara and let it breathe. Serve alongside orange with sal de gusano, goat cheese with figs, or dark chocolate with sea salt.

How to drink

Neat:
Best enjoyed in a clay copita or jicara to fully appreciate the subtle fruit, floral, and earth notes. Let it breathe before sipping for a fuller aromatic experience.

Traditional Pairing:
Serve with orange slices dusted in sal de gusano to complement the mezcal’s natural sweetness and complexity.

Food Pairings:

Grilled duck with fruit glaze or mole manchamanteles

Goat cheese and fig tartines

Dark chocolate with sea salt and nuts

Fresh ceviche with citrus and herbs to highlight the mezcal’s brightness

Cocktail Use:
While best sipped neat, Tobalá can elevate refined cocktails:

Mezcal Old Fashioned: With fig syrup and chocolate bitters

Floral Sour: Jasmine tea syrup, lime, and egg white for a silky twist
