Description

Fifth-generation mezcalero Juan Antonio Coronel makes Tres Tribus Cuishe in San Francisco Nuxaño, Oaxaca. Wild Cuishe agave cooks underground with Encino oak before machine mashing. Fermentation takes place in buried cement amphoras with volcanic aquifer water. Two distillations in copper stills follow. The mezcal is bottled unaged.

Rosemary, cooked agave and jasmine lead the nose. Vanilla, cinnamon and a tangy blue cheese note follow. Rosemary and thyme carry onto the palate, alongside cooked pineapple, fig and quince. Vanilla bean and cinnamon bark add spice. Savory notes recall aged miso and blue cheese, while cacao nibs, wildflowers and forest floor bring earthy detail.

Serve neat in a clay copita or veladora glass. Give it several minutes to open. Try orange wedges with sal de gusano, or pair with rosemary-seasoned lamb, aged cheese or dark chocolate with sea salt.

Palate:
Bold and expressive.

Herbal: Fresh rosemary and thyme

Sweet & Fruity: Cooked pineapple, fig, and quince

Spiced: Vanilla bean, cinnamon bark

Savory: Subtle umami, reminiscent of blue cheese or aged miso

Floral & Earthy: Cacao nibs and wildflower with a touch of forest floor

Finish:
Long and resonant, with lingering notes of cacao, dried fig, pine resin, and a faint mineral salinity that echoes the mountain spring origins.

How to drink

Neat:
Sip slowly from a clay copita or veladora glass to appreciate the spirit’s full spectrum of aromas and flavors. Allow it to open in the glass for several minutes to release deeper, savory complexities.

With Orange & Sal de Gusano:
Enhance the vegetal and earthy notes with traditional Oaxacan pairings—orange wedges dusted in worm salt highlight both sweetness and umami.

Food Pairings:

Charred lamb or goat with rosemary or mole negro

Aged cheeses like Manchego or Bleu d’Auvergne

Dark chocolate with sea salt or spiced quince paste

Cocktail Use (for the adventurous):

Savory Mezcal Negroni: Pair with a gentle vermouth and amaro to let the funky herbal tones shine.

Smoky Fig Sour: Shake with fig syrup, fresh lime, and egg white for a velvety, aromatic twist.
