Description
For Quiereme Mucho Tepextat, Wilibaldo Rodríguez works with 100% wild Tepextate agave harvested in Oaxaca. The plants take 19 to 25 years to reach maturity. Rodríguez hand-crushes the agave hearts and follows traditional methods in making the mezcal. That long period in the field and the manual work with the hearts are central details of its production.
Sage and wild mint lead an herbal nose. Earthy root vegetables and a hint of roasted sweet potato add depth. The palate turns floral, with wildflowers and a light sweetness reminiscent of honeysuckle. Mild pepper adds spice without taking over the floral notes. The texture is silky.
Serve on its own at room temperature or slightly chilled. Sip slowly to follow the shift from herbs to flowers. It can also be used in a Mezcal Old Fashioned with sugar and bitters.
