Description

Mezcalero Enrique Jimenez makes Fidencio Madrecuixe in Santiago Matatlan, Oaxaca. He works with wild Madrecuixe agave that has matured for 12 to 15 years. The production includes five days of pit roasting over black oak. That time in the earth is part of the process behind the mezcal's pronounced smoke.

Vegetal and floral aromas open the glass. On the palate, firm smoke meets a subtle acidity that gives it contrast. Leather adds an earthy note, while a little caramel provides sweetness. The flavors move between smoky, savory and sweet, keeping the wild agave's character present through each sip.

Try it neat and sip slowly. If you prefer it chilled, serve over one large ice cube to introduce a little dilution while exploring the smoke, floral notes and caramel.

Vegetal, floral
Palate
Bold smoke, subtle acidity, leather, delicate caramel

Del Maguey Single Village Madrecuixe opens with green, vegetal aromas of banana leaf, green papaya and fresh-cut bamboo, the signature of wild Agave karwinskii grown around San Luis del Río.

On the palate those green notes give way to ripe mango and pineapple. The finish is long, dry and clean.

How to drink

Del Maguey Single Village Madrecuixe is a mezcal to sip slowly. Here are some ways to enjoy it:

  1. Neat: Pour it into a copita or small glass at room temperature to take in the banana-leaf and tropical-fruit aromas.
  2. With a Drop of Water: A few drops of water open up the green papaya and bamboo notes.
  3. Traditional Pairings: Serve it the Oaxacan way, with orange slices and sal de gusano, or alongside ceviche and fresh tropical fruit.
