Description

Maestro mezcalero José Cortés makes El Jolgorio Sierrudo Ancestral in Santiago Matatlán, Oaxaca. Sierrudo, or Agave americana, can take 13 to 15 years to mature and reach 1,000 pounds. The mezcal is made in small batches, with individually marked bottles connecting the release to its maker.

Ripe agave, green herbs and freshly cut wood shape an earthy nose. Floral and citrus hints provide contrast. The full-bodied palate moves through roasted agave, minerals and fresh vegetation. Green pepper, mesquite smoke and a trace of dark chocolate follow. The long finish holds smoke and minerality, ending with warming sweetness.

Sip slowly from a clay copita. Pair with lamb barbacoa, smoked meats or mole. Grilled corn with chili and lime, or dark chocolate with sea salt, offers another direction.

Nose: Intense and earthy, with an inviting aroma of ripe agave, green herbs, and a hint of freshly cut wood. There are subtle floral and citrus undertones, adding a bright contrast to the deeper, rustic notes.

Palate: Rich and full-bodied, with a pronounced sweetness that hints at the high sugar content in the Sierrudo agave. Notes of roasted agave, minerals, and fresh vegetation give way to complex flavors of green pepper, smoky mesquite, and a whisper of dark chocolate.

Finish: Long and smooth, with lingering smokiness, a touch of minerality, and a final, warming sweetness that enhances the mezcal's balanced complexity.

How to drink

Serve El Jolgorio Sierrudo Ancestral neat in a clay copita to enjoy the mezcal’s full character and intensity. Pair it with foods that highlight Oaxacan flavors, such as roasted lamb barbacoa, smoked meats, or rich mole sauces. For a pairing that complements its earthy sweetness, try it alongside grilled corn with chili and lime or a side of dark chocolate with sea salt. El Jolgorio Sierrudo is best savored slowly, allowing you to appreciate its layers and the dedication of the Cortés family in every sip.
