Description

Wild Madrecuishe agave is the starting point for this El Jolgorio mezcal. A member of Agave karwinskii, it has a tall, slender stalk. Traditional mezcaleros in Oaxaca work with it in small batches. Their mezcal centers the character of the agave and the terrain where it was harvested, with earth, minerals and smoke running through the liquid.

Fresh herbs and green pepper open the nose. Wet earth and faint campfire smoke follow. Roasted agave anchors the palate, joined by citrus peel, mineral saltiness and gentle spice. The finish is long and dry. Smoke lingers alongside vegetal sweetness and earthy notes.

Serve neat in a copita or small clay mezcal cup. Give it a little time to breathe before sipping. Grilled meats, citrusy ceviche or traditional Oaxacan dishes make fitting accompaniments.
