Description

Wild Jabali grows on rocky ground and cliffs, making harvest demanding. For Del Maguey's Vino de Mezcal series, sustainably harvested hearts are roasted in the earth and buried for two weeks. A horse-drawn stone mills the agave. Fermentation uses airborne microbes, followed by double distillation. The name Jabali means wild boar, a reference to the plant's toothlike leaves.

Smoky earth, roasted agave and wild herbs meet on the nose, with a little sweetness. Charred wood and roasted agave lead the palate. Thyme and sage follow, while earthiness stays present. Delicate sweetness remains alongside the stronger smoky and herbal notes. The finish is long and warming.

Serve neat in a copita or a glass with a wide rim. Let the pour breathe briefly, then take small sips to follow the herbs and smoke.

How to drink

Del Maguey Mezcal Single Village Wild Maguey Jabali is best enjoyed slowly, sipped, and savored to fully appreciate its complex flavors and the craftsmanship that went into its production. Here are some serving suggestions:

  1. Neat: Pour a small amount of this mezcal into a traditional copita or a wide-rimmed glass to savor its flavors without dilution. Allow it to breathe for a few moments before taking your first sip.
  2. With a Slice of Orange and Sal de Gusano: Serve with a slice of fresh orange and a pinch of sal de gusano (worm salt) to enhance the flavors. The citrusy notes of the orange complement the smokiness, while the salt adds a savory touch.
  3. Mezcal Cocktails: Del Maguey Jabali Mezcal can be used as a premium ingredient in mezcal cocktails. Try it in a classic Mezcal Margarita or a Mezcal Negroni for a unique twist on these beloved drinks.
  4. Food Pairings: Pair this mezcal with grilled meats, smoked cheeses, or dishes with strong umami flavors. The smokiness of the mezcal will complement these dishes beautifully.

Remember to sip responsibly, as this mezcal is a fine example of the artisanal craft and tradition of mezcal-making.
