Description
Wild Cenizo agave, Agave durangensis, is native to Durango. Amarás uses plants matured for 14 years for Logia A3 Cenizo. Roasting takes place in volcanic stone ovens fueled with mesquite and huizache wood. Distillation uses a copper still fitted with a wooden cap, continuing the artisanal process.
Fresh citrus and earth open the nose. Gentle smoke, flowers and mineral notes follow. The palate has a velvety texture, with roasted coffee, toasted oak and a little caramelized agave. Spice and dark chocolate emerge behind them. Dried fruit, smoky wood and espresso linger in the long finish.
Serve neat in a copita or tasting glass. For a Mezcal Espresso Martini, combine with espresso, coffee liqueur and simple syrup. Dark chocolate, grilled meats or roasted vegetables make useful pairings at the table.
