About tobalá & wild agaves

Tobalá, cuishe, madrecuishe, tepeztate, arroqueño and the other wild and semi-wild agaves grow slowly — some take twenty-five years — and are harvested in small numbers. Their mezcal is made in tiny batches and tastes unlike anything from espadín: floral, mineral, tropical, sometimes savoury.

Bottles on this shelf come and go. When a batch sells out, the next one may be years away.

Questions

What collectors ask

What is an ensamble?

A mezcal made from two or more agaves cooked and distilled together. We list ensambles on their own shelf.

Why are wild-agave mezcals expensive?

Decades to mature, low sugar yields, hand harvesting in the mountains and batches measured in hundreds of litres.

Are wild agaves sustainable?

Responsible producers replant and limit harvests; several on this shelf run nursery programs. We note it where a producer discloses it.
