Espadín mezcal

Espadín is the agave behind most mezcal — eight years to mature, roasted in earthen pits, and the clearest way to taste a palenque’s hand.

About espadín mezcal

Espadín (Agave angustifolia) is the agave behind most mezcal. It matures in six to eight years, can be cultivated, and gives a mezcalero a reliable canvas. Its flavour is the baseline of the category: roasted agave, citrus, a little smoke and a green, peppery edge.

Because espadín is everywhere, it is the best way to compare palenques. Two espadíns from villages ten miles apart can taste like different spirits.

Questions

What collectors ask

Why is espadín cheaper than tobalá?

It grows faster, yields more, and can be farmed. Wild agaves take decades and are harvested in small numbers.

Is espadín a beginner’s mezcal?

It is the place to start, but it is not a lesser mezcal. Some of the most respected bottles in the category are espadín.

What is a joven espadín?

Unaged. Most mezcal is joven; ageing in wood is rare and, for many mezcaleros, beside the point.
