About añejo & extra añejo
Questions
What collectors ask
What is the difference between añejo and extra añejo?
Age. Añejo is one to three years in oak; extra añejo is three years or more. Extra añejos are darker, richer and usually pricier — we shelve them separately.
Is older always better?
No. Long ageing can flatten agave character, and Mexican heat pulls a lot of oak out of a barrel quickly. Many people prefer an añejo at eighteen months to one at five years.
Why do añejos vary so much in colour?
Barrel type, previous contents, warehouse temperature and, unless the bottle is additive-free, permitted caramel colouring.
