Description
Volcán de Mi Tierra produces La Gavilana in Jalisco, Mexico, as part of its Colección series. The añejo rests in oak, developing an amber-gold color and a layered barrel character. This special edition has individually numbered packaging. The tequila is bottled at 40% ABV in a 700 mL bottle.
Caramel and vanilla introduce the nose, followed by toasted oak and a little dried fruit. Cooked agave remains present on the palate, where baking spice and dark chocolate meet a smooth oak background. The finish is long and warm. Oak persists, with soft spice carrying through the final notes.
Pour neat at room temperature into a tequila glass. A large ice cube gradually opens the caramel and spice. Serve with dark chocolate, or use in an Old Fashioned in place of aged whiskey.
