Description

Amatitán, Jalisco, is the home of Cabal Reposado, produced at NOM 1646 from 100% Blue Weber agave. The spirit rests six to eight months in charred American oak bourbon barrels. That time adds warmth and roundness to the citrus-led agave base. Within Cabal's lineup, the reposado sits between the blanco and añejo. It is bottled at 40% ABV.

Cooked agave and sweet plantain greet the nose. Vanilla bean follows, with citrus providing a lighter edge. Agave remains central on the palate, joined by plantain, a little nuttiness and gentle oak spice. The finish lasts a moderate length, carrying warm vanilla and soft agave sweetness.

Serve neat in a wide-mouth glass and wait a minute before sipping. For a Paloma, combine it with fresh grapefruit juice and a splash of sparkling water over ice.

Neat: Pour into a wide-mouthed glass and allow a minute to open — vanilla and plantain notes emerge cleanly at room temperature.

On the Rocks: A single large ice cube tempers the warmth and slowly draws out the agave sweetness as it dilutes.

Paloma: Combine with fresh grapefruit juice and a splash of sparkling water over ice for a bright, citrus-driven serve.

Margarita: Shake with fresh lime juice and orange liqueur for a reposado margarita with vanilla depth and natural agave character.

Pair With: Grilled meats, mole sauce, aged cheeses, or dark chocolate all complement the oak and plantain notes well.
