Description

Stone ovens begin the process for Casa San Matias Tahona Reposado. The steamed agave is crushed with the house's original stone tahona from 1886, then fermented in wooden vats. Distillation follows in copper pot stills. Oak barrel maturation adds another stage to this sequence, bringing wood-derived notes to the cooked-agave character.

Baked agave leads the nose, with vanilla and oak close behind. The palate is rich and velvety, carrying a pronounced cooked-agave flavor. Caramel and spice emerge around it, reflecting the time spent in oak. The finish is smooth and leaves a lingering warmth.

Pour neat to follow the agave from aroma through palate. For a mixed serve, try a Reposado Old Fashioned or a Tahona Reposado Tonic. Both are suggested preparations for this tequila.
