Casa San Matías gives this single-estate Corazón tequila 26 months in barrels that once held W.L. Weller 12 Year Wheated Bourbon. The twelve-year reference belongs to the bourbon, while the tequila's maturation lasts just over two years. Made without additives, the añejo brings roasted agave together with sweet oak and bourbon barrel character.

Oak, caramel, almond and chocolate appear first on the nose. Eucalyptus, walnut and maple syrup follow. Heavily roasted agave anchors the moderately sweet palate, wrapped in toasted vanilla and bourbon-inflected caramel. The finish has a silky texture and lingering intensity. Aged oak, herbs and gentle spice remain.

Sip neat at room temperature. Try a single ice cube or a splash of water to soften the oak. An Añejo Old Fashioned or Tequila Sour follows its sweeter notes.
