Is sotol a mezcal?
No. Sotol is made from Dasylirion, not agave, and has its own denomination of origin in northern Mexico.
Where is raicilla from?
Jalisco — the same state as tequila — but from different agaves and a different tradition, mostly in the Sierra and along the coast.
How do I serve these?
Neat, at room temperature, like mezcal. Sotol also makes an unusually good highball.
