The agave spends 72 hours roasting in brick ovens. Extraction combines a stone tahona with a roller mill. Unfiltered and additive free, the tequila is bottled at 50% ABV.\u003c\/p\u003e\u003cp\u003eCooked agave, citrus zest and white pepper introduce the nose. Fresh herbs, cinnamon and anise follow. The palate has a silky texture, carrying roasted agave, minerality and baking spice. Lime oil, green olive and vanilla bean emerge as it opens. Agave nectar, cracked pepper and citrus blossom linger through a long, warm finish.\u003c\/p\u003e\u003cp\u003ePour neat into a copita and give it a few minutes.
