His work draws on Zapotec and Mixtec traditions. The agave cooks underground over Encino oak for up to a week before being broken down with wooden mallets. Fermentation takes place in subterranean cement amphoras with volcanic spring water and native yeast. Two passes through copper stills follow. The mezcal is bottled unaged.

Cooked pineapple, fig, and quince meet jasmine on the nose, with toasted cacao and wild herbs underneath. The palate is silky, bringing together stewed fruit, honeysuckle, agave nectar, and roasted cacao. Volcanic stone and a saline edge accompany a long, clean finish.

Pour neat into a clay copita or jicara and let it breathe. Serve alongside orange with sal de gusano, goat cheese with figs, or dark chocolate with sea salt.
