Workers use the Canoa y Mazo method, crushing by hand with a wooden mallet in a canoe trough. Produced under NOM 1459, the blanco is bottled at 48% ABV.\u003c\/p\u003e\u003cp\u003eSweet roasted agave and ripe grapefruit open the nose, with a trace of smoke. Caramelized agave anchors the palate as bright citrus and cracked black pepper build around it. Light smoke remains underneath. The finish is clean, leaving black pepper, a little smoke and a slowly fading mineral note.\u003c\/p\u003e\u003cp\u003eServe neat at room temperature or over one large ice cube. For a Paloma, combine with grapefruit soda and fresh lime.
