NOM 1414 uses a proprietary combination of wild and champagne yeasts. After distillation, the spirit rests two months in American white oak, then one month in French oak. It is bottled by hand at the distillery, unfiltered and additive-free, at 40% ABV.\u003c\/p\u003e\u003cp\u003eVanilla and ripe banana rise from the glass with cooked agave and caramel. On the palate, caramel and vanilla arrive first. Baked agave follows, with soft oak spice adding warmth. The finish takes a drier direction. Oak lingers alongside gentle agave earthiness.\u003c\/p\u003e\u003cp\u003ePour neat into a wide-mouth glass and allow a minute before sipping. A large ice cube softens the oak and brings vanilla and caramel forward.
